Little Hampton Pinot Noir

Shadowfax Little Hampton Pinot Noir is drawn from the Little Hampton Vineyard. At 700 metres above sea level, the vineyard is one of the highest and coolest in the Macedon Ranges.
The fruit ripens in the autumn, accumulating extraordinary flavour and retaining excellent acidity. It is handpicked and carefully sorted.
The grapes are destemmed, but not crushed, then placed as whole berries into small open fermenters. In some vintages, a portion is added as whole bunches. Fermentation occurs naturally with daily hand pump overs.
After 2-3 weeks on skins the wine is pressed and racked to French oak barrels for slow maturation in the winery's underground cellar. It is blended and filtered before bottling.
Deep purple crimson, Shadowfax Little Hampton Pinot Noir is pure, lifted and seductive, its fine tannins and acidity perfectly balanced. Cellaring potential is seven years.
